Title: Chicken Kelaguen (Guam)

1tbSalt
1/2cLemon juice
1cGrated (fresh) coconut
3lbWhole chicken fryer
6smVery hot peppers (optional
  Or less)

Cut chicken in half and sprinkle with salt. Place in a broiler pan or do over charcoal. Broil for 10 minutes only as the chicken should not be throughly cooked. Turn over and broil another 5 minutes. Debone and chop. Mix all ingredients in a bowl. Chill at least one hour. Serve with tortillas or rice. From: Ruth Hanschka Date: 21 Apr 98
