Title: Hawaiian Banana Nut Bread

3 c | all purpose flour | |
3 | /4 t | s salt |
1 t | s baking soda | |
2 c | sugar | |
2 t | s ground cinnamon | |
1 c | chopped macadamia nuts | |
1 | /2 c | grated coconut |
3 | eggs -- beaten | |
1 c | vegetable oil | |
2 c | mashed ripe bananas | |
1 c | n crushed pineapple -- | |
: | (8-ounce) drained | |
3 t | s vanilla extract |
Combine first 5 ingredients; stir in pecans and coconut. Combine remaining ingredients; add to flour mixture, stirring just until dry ingredients are moistened. Spoon batter into 2 greased and floured 8 1/2 x 4 1/2 x 3 inch loaf pans. Bake at 350 for 1 hour and 10 min. Remove from pans, and let cool on wire racks.
