Title: Hawaiian Jumbles

COOKIES
1/3cButter
1cSugar
1/2cEggs, 2-3 eggs
1tsVanilla
2cFlour
1 1/2tsBaking powder
1/2tsSalt
FILLING
3tbFlour
1/2cPineapple juice
1cCrushed pineapple
1cCurrant jelly
1/2cWalnuts, chopped
  Red colouring

Cream butter and sugar. Add vanilla.

Beat in eggs, one at a time.

Sift flour, salt and baking powder and then stir into creamed mixture.

Yield: 1 2/3 lbs batter. Drop by teaspoonfuls onto a greased sheet, a little less than 1/2-oz of batter per cookie. Form a depression in each and heap with filling.

To make the filling, blend flour and juice. Add remaining ingredients and cook, stirring until thick. Cool. Yield: 1 2/3 lb of filling. Red colouring may be added to produce a desirable colour.

Bake at 425F for 10 minutes.

Note: Cookies spread out considerably during baking.
