Title: Southern Pecan Bars

1 1/3 | c | Sifted all purpose flour |
1/2 | ts | Baking powder |
1/3 | c | Butter or margarine |
1/2 | c | Firmly packed brown sugar |
1/4 | c | Finely chopped pecans |
2 | Eggs | |
3/4 | c | Dark corn syrup |
1/4 | c | Firmly packed brown sugar |
3 | tb | Sifted all purpose flour |
1/2 | ts | Salt |
1 | ts | Vanilla extract |
3/4 | c | Coarsely chopped pecans |
Sift 1-1/3 cups flour with baking powder. Cream butter in mixing bowl. Gradually add 1/2 cup brown sugar; continue creaming until light and fluffy. Add sifted dry ingredients, mix until particles are fine. Stir in 1/4 cup finely chopped pecans. Press firmly into bottom of a well-greased 9x13" pan. Bake at 350 deg for 10 minutes.
Beat eggs until foamy. Add corn syrup, 1/4 cup brown sugar, 3 Tbsp flour, salt and vanilla extract; mix thoroughly. Pour over partially baked crust. Sprinkle with 3/4 cup coarsely chopped pecans. Bake at 350 deg for 25-30 minutes. Cool. Cut into bars.
