Title: Potato Pancakes-Perkins?

Yield: 1 Bunch
Grate four medium-sized potatoes. Place the potatoes in a dishtowel, and squeeze the towel to remove excess moisture. Scrape the whole mess out of the towel into a bowl. Break 2 eggs into this, and stir. Now add enough flour to make a pancake-like thick batter. (The amount of flour will vary according to the moisture content of the potatoes, and perhaps the phase of the moon -- just keep adding it until it tightens up the mixture, it's not a critical measurement, anyway :-)
Add salt and a healthy grind of black pepper to this, and fry on a lightly greased griddle until brown on one side. Turn and brown the other side.
