Title: Enchilada Pie #2

Cooked ground beef, well | ||
Drained | ||
Crushed Fritos | ||
Finely chopped fresh onions | ||
Grated cheddar cheese | ||
Chopped black olives | ||
Canned enchilada sauce |
(No quantities here, use as much or as little of the ingredients as you like depending on how many you're feeding)
In an ovenproof casserole, first place a layer of enchilada sauce, then a layer of crushed Fritos, then a layer of beef. Sprinkle with onions and olives, and spoon on more enchilada sauce. Repeat layers, ending with a layer of Fritos, followed by sauce, and more grated cheese.
Bake in a 350 degree oven until the cheese is melted (30-45 minutes).
If you don't mind leftovers, this is actually better the next day.
