1/2 | lb | Beef, ground |
3/4 | c | Jack cheese, shredded |
1/2 | c | Ranch dressing |
1/4 | c | Olives, ripe and sliced |
1 | tb | Green chiles, chopped |
16 | | Potato skin quarters, cooked |
In a medium bowl stir together the beef, 1/2 cup of the cheese, ranch
dressing, olives and green chiles until well blended. Using a spoon, put
approximately 2 T filling on each potato skin. Sprinkle potato skins with
the remaining 1/4 cup cheese. Broil 6" from heat for 3 to 5 minutes or
until hot and cheese is melted. Makes 16
