Title: Mexican Potatoes

1 | lb | Potatoes, mashed -- coarsely |

1/4 | c | Onion, diced |
1 | c | Tomatoes -- diced |
1/2 | ts | Fresh ground black pepper |
To taste | ||
1/2 | ts | Hot chili pepper -- to taste |
(1/2 to 1) | ||
Salt to taste | ||
1 | Clove garlic -- pressed or | |
Minced |
Fry all ingredients, except potatoes, together for 5 minutes or until they are clear and tender. You may add oil or butter to your taste. Add potatoes, fry until heated through. Garnish with shredded cheese.
