1/4 | c | Olive Oil |
2 | tb | Wine Vinegar |
1/4 | ts | Dried Whole Tarragon |
1/4 | ts | Salt |
1/4 | ts | White Pepper |
1 | tb | (To 2) |
1/4 | c | Green Onions -- thinly |
Sliced | ||
1/4 | c | Fresh Parsley -- minced |
New Potatoes, (About 1 1/2 | ||
Lbs) -- unpeeled | ||
Dijon Mustard |
Wash potatoes and cook in boiling water until tender. Cut into 1/4-inch slices, add wine and let stand for 10 mins. Combine olive oil and next five ingredients and stir well. Pour over potato mixture. Add green onions and parsley and stir gently. Makes 8 servings.
