Title: Red Potatoes & Peas

3 | md | Red potatoes -- scubbed |
1 | bn | Green onion -- chopped |
10 | oz | Frozen peas |
2 | ts | Margarine |
1/2 | ts | Fresh ground pepper |
2 | tb | Fresh mint -- chopped |
Cut potatoes into 3/4" pieces. Place potatoes and onions in a saucepan, barely cover with water and bring to boil. Simmer until just tender. add peas, cover and cook for 1 minute. Drain, add margarine, pepper and mint. Toss gently and heat for 1 minute more. 125 calories and 1 gram fat.
