Title: Vegetable Potato Casserole

Oil for greasing dish | ||
4 | lb | Potatoes, peel, cut 1/8 inch |
1 | ts | Salt |
1/2 | ts | Pepper |
3 | Peppers, yellow | |
1 | lb | Tomatoes, plum |
1 | ts | Rosemary, fresh |
1/2 | ts | Oregano |
4 | lg | Garlic cloves minced |
1/4 | c | Olive oil |
1/4 | c | Cheese, parmesan |
Cut peppers into 1/2 inch wide strips, deseed cut tomatoes into 1/4 in thick slices Preheat oven to 400F grease 4 qt shallow baking dish, in dish, layer one third of the potatoes, one third the salt and pepper, half the peppers and half thetomatoes, and half the garlic and herbs. Repeat. Top with remaining potatoes, salt and pepper. drizze with oil. bake 1 hour until potatoes are tender and top is light brown. sprinkle with cheese, bake 5 minutes more, let sit 10 minutes before serving.. and excellent pot luck dish
