Title: Stewed Greens with Potatoes & Grilled Kielbasa

2 | tb | Olive oil |
1 | Onion -- thinly sliced | |
1 | tb | Garlic -- minced |
1 | tb | Red pepper flakes |
2 | lb | Greens -- chopped |
1/2 | c | White vinegar |
2 | qt | Chicken stock |
4 | Potato -- peeled and halved | |
1 | lb | Kielbasa or chorizo |

In large soup pot, heat the olive oil over medium high heat until hot but not smoking. Add the onion and saute, stirring occasionally, about 5 to 7 minutes. Add the garlic, red pepper flakes, and greens and cook, stirring, for 2 to 3 minutes; the greens should be bright green at this point. Add the vinegar and chicken stock, bring to a boil, and add the potatoe. Reduce the heat to low and simmer, uncovered, for 1 hour. Meanwhile, grill the sausages over a medium hot fire for 5 to 8 minutes, or until they are well browned on the exterior. When the soup has cooked for 1 hour, slice the sausages thinly and add them to the soup. Continue to cook for 5 minutes. Adjust seasoning with salt and pepper and serve.
