Title: Leeks or Potatoes in Wrappers W/ Tsaziki Sauce

2 | ts | Oive oil |
1/3 | ts | Red chilli powder |
3/16 | ts | Salt |
Some oregano. | ||

Leftover mashed potatoes | ||
Herbs and spices | ||
Tsaziki sauce: | ||
Grated cucumber | ||
Salt | ||
Crushed garlic | ||
Fresh basil or mint | ||
Yogurt | ||
Pepper |
Try leeks as a filling in this thing whose name I do not know but which I have cooked a zillion times and fed so many guests with.
Chop leeks [especially the tender light green part; but you can use a large portion of the tops too] very finely.
For 1 cup leeks, add 2 tsp oive oil, 1/3 tsp red chilli powder, 1/5 tsp salt, and some oregano.
Take out an egg roll wrapper, and top one diagonal half og the square wrapper with a third of the leek mixture. Bring the one corner up and over its opposite to form a triangle. Seal edges with water after pressing out any trapped air. [more or less]. Make all the "things" in a similar manner and keep them under a moist [not soaking wet] towel.
Heat a large oil smeared skillet and depending on the size place three or more of the triangles over it. Turn to cook the other side, drizzle a few drops of oil as necessary, and make sure to cook the folded side of the triangle by holding them up right.
Keep covered, and serve warm with tsaziki sauce
[I simply mix some grated cucumber, salt, crushed garlic and fresh basil or mint with yogurt. Add pepper if you like]
Leftover mashed potatoes with some herbs and spices make a great filling too.!
