Title: Baked Potatoes with Apple

4lgBaking potatoes
1/2mdCooking apple
1lgOnion
1tsDried sage
1/2tsMustard powder
  Salt

preheat the oven to 200C/400F/GM6, wash and prick the potatoes sprinkle with salt and cook in the oven for 1 1/2 hours.

Peel and finely chop the onion and peel, core and finely chop the apple. Dry fry the onion in a non-stick pan until the onion begins to soften. Stir in the apple and cook for a further 2-4 minutes until soft.

Remove the potatoes from the oven and allow to cool. Cut the potatoes in half and scoop out the middles into a bowl, leaving the skins intact. Mash the potato well. Add the onion and apple mixture to the potato. Add the sage, mustard and salt and mix thoroughly.

Spoon the mixture back into the potato skins and return to the oven for a further 15 minutes or until the tops are browned.
