Title: Rosemary - Roasted Potatoes - Sl 1/95

3 | lg | Baking potatoes; unpeeled |
Olive-oil flavored cooking spray | ||
1/4 | ts | Salt |
1 1/2 | ts | Dried rosemary |
1/2 | ts | Freshly ground pepper |
: Wash potatoes, and pat dry; cut into 1/4-inch slices. Arrange slices into four rows on a baking sheet coated with cooking spray, overlapping half of each slice with the next. Sprinkle with salt.
: Combine rosemary and pepper; sprinkle potato with half of mixture. Set remaining mixture aside.
: Bake at 375 F degrees for 20 minutes; turn potato over. Coat with cooking spray, and sprinkle with remaining rosemary mixture. Bake 20 additional minutes. Yield: 4 servings.
