Title: Parmesan Potato Puffs

2mdBaking potatoes; peeled and
1/4cParmesan cheese; freshly gra
2tbSkim milk
1/8tsSalt
1/8tsGround white pepper
1/8tsNutmeg
1/4cFrozen egg substitute; thawe
  Vegetable cooking spray

Recipe by: Dora Guerra Cook potato in boiling water until tender, drain, and mash. Add 1/4 c. parmesan cheese and next 4 ingredients; beat at med. speed of mixer just until mixture is smooth. Stir in egg substitute. Pipe or spoon potato mixture into 6 mounds on a baking sheet coated with veg. spray; sprinkle evenly with 1 tbsp. parmesan. Bake potato mounds at 350 degrees for 25 - 30 min. or until lightly browned
