9 | | Potatoes, grated |
1 | | Egg, beaten |
4 | sl | Bacon |
2 | tb | (heaping) sour cream |
1/2 | | Onion, chopped |
1 | ds | Salt |
1 | c | Milk, boiled |
1 | ds | Pepper |
Put potatoes into colander and press out juices. Cook bacon and keep the
fat. (Vegetarians omit meat.) Combine potatoes, bacon, onion and hot
bacon fat, and pour into a 9 x 13-inch baking dish. Pour milk over top.
Pour on egg and sour cream. Salt and pepper to taste. Bake at 350 F for 1
hour or until light brown on top. Serve immediately or let flavors blend
overnight.
