Title: Skinny Mashed Potatoes

2 1/2 | lb | White potatoes -- (about 5 |
Medium) | ||
3 1/2 | c | Chicken broth |
Freshly ground black pepper | ||
To taste |
1. Peel the potatoes and cut into 1-inch pieces.
2. Place in a pot with broth and bring to a boil. Cover, reduce the heat and simmer 15 minutes, or until potatoes are very tender.
3. Drain, reserving broth. Mash potatoes with 1 1/4 cups of the broth, adding additional broth until the desired consistency is reached. Season with pepper.
