Title: Snowy Mashed Potato Casserole

4 | lb | Potatoes |
8 | oz | Pk Cream Cheese, Softened |
1 | c | Sour Cream |
2 | ts | Salt |
1/8 | ts | Pepper |
1 | Clove Garlic -- Crushed | |
1/4 | c | Chopped Chives |
1/2 | ts | Paprika |
1 | tb | Butter |
Cook potatoes in boiling salted water in a large kettle for 15 minutes or until tender; drain. Mash potatoes in large bowl; add cream cheese, sour cream, salt, pepper and garlic. Beat at high speed until smooth and light. Stir in chives. Spoon into a lightly greased 10 cup baking dish; sprinkle with paprika and dot with butter. Bake at 350 F for 30 minutes or until lightly golden and heated through. Serves about 10. Can be made the day before and baked just before serving if desired.
