Title: Raphael's Baby Maine Mushroom Potatoes

* One potato will make one mushroom.
Method: Wash potatoes, hold potato in most elongated position, cut 1/4" (deep) into middle of potato. Turn potato making incision all the way around and from one end cut four slices toward incision. (Does this make any sense to you; you are supposed to end up with a mushroom shape.) Square off stem. Blanche in hot water or steamer until almost tender and fry until brown; or boil them. Coat bottom of baking pan with oil. Place potatoes in pan and bake at 500 F until brown. Serves: 3-4 mushrooms per person is adequate.
