Title: Peas in Potato Nests

4 | md | Baking potatoes (2-1/4# prox |
1/4 | c | Butter; softened |
2 | Egg yolks | |
1/4 | c | All-purpose flour |
3/4 | ts | Salt |
1/2 | ts | Freshly ground pepper |
1/8 | ts | Ground nutmeg |
10 | oz | Pkg frozen peas |
1 | tb | Butter |
1/2 | ts | Dried dillweed |
Peel and quarter potatoes; cook in boiling water for 10 to 15 minutes or until tender. Drain well, and mash. Combine potatoes and 1/4 cup butter in a large mixing bowl. Beat at medium until well blended. Beat in egg yolks, flour, salt, pepper, and nutmeg on high until smooth.
Spoon about 1 cup potato mix onto a greased baking sheet; form into a "nest" about 4 inches in diameter with 1-1/2-inch sides. Repeat with rest of mix. Bake at 400ø F. for 30 minutes or until browned.
Meanwhile, cook peas according to package instructions. Drain well. Toss with 1 Tb butter and dillweed. Spoon hot peas evenly into "nests".
