Title: Three Cheese Potato Fluff

1/2 | Bag Ore-Ida mashed potatoes | |

3/4 | c | Milk |
1/2 | c | Swiss cheese -- shredded |
1/4 | c | Parmesan cheese |
3/4 | c | Sharp cheddar cheese -- |
Shredded | ||
3 | lg | Scallions |
1/4 | c | Onion -- chopped |
1 | ts | Salt |
1/2 | ts | Freshly ground pepper |
3 | lg | Eggs -- separated |
Preheat oven to 375=B0. Add milk to the prepared potatoes, cheeses, scallions, onions, salt and pepper and egg yolks. Mix together thoroughly until well blended. In a small bowl with mixer on high speed, whip the egg whites until stiff peak form. Gently fold beaten egg whites into mashed potato mixture. Spoon the mixture into a greased 3" deep casserole dish. Bake about 50 minutes, or until puffed and golden.
