Title: Red Potato Bundles

Yield: 2 Servings
6 | sm | Red potatoes -- quartered |
1 | sm | Onion -- thinly sliced |
6 | Cloves garlic -- peeled | |
2 | Sprigs fresh rosemary or 2 | |
ts | Dried -- crushed | |
1/2 | ts | Salt |
ds | Pepper | |
2 | tb | Parmesan cheese -- grated |
1/4 | c | Olive or vegetable oil |
Place potatoes, onion and garlic on two pieces of heavy-duty aluminum foil, about 12x12-inches; top with rosemary, salt, pepper and cheese. Drizzle with oil. Fold foil in half diagonally; tightly seal edges of foil and shape each packet into a semicircle. Grill, covered, over medium coals for 40-45 minutes or until potatoes are tender. Open foil carefully to allow steam to escape.
