Title: German Summer Potato Salad
Categories: Salad Vegetable German
Yield: 15 Servings

1/3cStrong chicken stock -- hot
1/2cCider vinegar
1/2cGreen onion -- minced
2tsBlack pepper
2tsSalt
1cOil
10lbPotatoes -- cooked and
  Sliced
1cFresh parsley -- chopped

Toss all ingredients together. Serve at room temperature. Note: the chicken stock can be homemade or canned, but fortified with a Minor's type chicken base or bouillon to give it intense chicken flavor. The more intense, the better the salad.
