Title: Deviled Potato Salad

3/4 | c | Purchased potato salad |
Dressing | ||
1/3 | c | Dijonnaise creamy mustard |
Blend | ||
2 | lb | Potatoes, cooked, peeled and |
Cut into cube | ||
2 | Hard-cooked eggs, chopped | |
Lettuce leaves -- optional | ||
Chopped parsley -- for | ||
Garnish |
In large bowl, combine dressing and mustard blend. Add potatoes and eggs; toss gently to coat. Cover; chill. If desired, spoon into lettuce-lined bowl and garnish with chopped parsley.
Variation: To make Deviled Ham Potato Salad, add 1 cup diced cooked ham with the potatoes and hard-cooked eggs.
