Title: Bavarian Potato Soup^ - T O H

Yield: 8 Servings
1/2 | lb | Bacon; diced |
2 1/2 | lb | Potatoes; peeled & cut into |
.1/2" cubes | ||
2 | lg | Carrots; finely chopped |
3 | Ribs celery; finely chopped | |
4 | Leeks; finely chopped | |
2 | ts | Salt |
1/2 | ts | Dried marjoram |
1/4 | ts | Pepper |
Water to cover | ||
Chopped fresh parlsey, opt. |
Fry bacon in soup pot; drain all but 2 tablespoons drippings. Add remaining ingredients except parsley. Simmer, covered, 2 hours. Garnish with parsley, if desired.
Makes 2 quarts.
