Title: Sliced Baked Potatoes - Microwave

Yield: 4 Servings
4 | md | Even potatoes |
1 | ts | Salt |
3 | tb | Melted butter |
3 | tb | Chopped fresh herbs -OR |
3 | ts | Dried herbs of your choice |
4 | tb | Grated Cheddar cheese |
1 1/2 | tb | Parmesan Cheese |
1. Peel potatoes if skin is tough, otherwise just scrub and rinse them and pat dry.
2. Cut potatoes into thin slices but NOT all the way through. Use a handle of a spoon to prevent knife from cutting all the way.
3. Place potatoes in a microwave dish or pan. Sprinkle with melted butter and chopped parsley. chives or sage. Fan them slightly.
4. Microwave at HIGH power for 10 minutes, rearrange the potatoes after 5 minutes.
5. Let rest for 5 minutes.
6. Sprinkle with grated cheese and Parmesan cheese.
7. Microwave for another 4 to 6 minutes at HIGH power until cheeses are melted and potatoes are soft. Sprinkle with salt.
8. Serve potatoes as a side dish or as a main dish with just a salad.
Tips: You may use caraway seeds or cumin in place of herbs, if desired. Use about 1 1/2 tsp for 4 large potatoes. Good served with: Any meat, fish or poultry dishes or as a main dish with just a salad.
