Title: Sparkling Potatoes

Yield: 12 Servings
1/2 | lb | Bacon, cut into small pieces |
1 | lg | Onion, sliced thin |
2 | Cloves minced garlic | |
8 | Potatoes, scrubbed with skins,sliced | |
1/2 | lb | Fresh mushrooms, sliced |
1 | cn | 12-ounce Sprite (tm) |
1 | ts | Salt |
1/2 | ts | Pepper |
1/2 | lb | Cheddar cheese, grated |
1/4 | c | Parsley, chopped |
Brown in the Dutch oven the bacon, using 15 charcoal briquets on the top and nine briquets on the bottom.
Drain grease, then add and cook until clear the sliced onion and minced garlic.
Layer the potatoes and mushrooms in the Dutch oven with the onions and bacon. Pout the can of Sprite over the top. Sprinkle with the salt and pepper.
Cover with lid . Steam until potatoes are tender. About halfway through the cooking time, turn mixture over to prevent burning.
Just before serving, top with the grated cheddar cheese and chopped parsley.
Continue cooking until cheese melts. Serve directly out of Dutch oven, spooning sauce over portions.
Use a 12-inch Dutch oven. Cooking time required is 40-45 minutes.
