Title: Marvelous Mashed Potatoes

Yield: 6 Servings
3 1/2 | lb | White potatoes peeled and quartered |
1 | c | Non-fat sour cream |
1 | c | Skim milk |
Salt and pepper to taste | ||
VARIATIONS (OPTIONAL | ||
5 | Garlic cloves roasted, peeled | |
1 | tb | Prepared horseradish |
1/4 | c | Chopped green onions |
1 | cn | (4.5oz) mild green chilies peeled and chopped drained |
Boil the potatoes in water until tender. Drain. Add sour cream, milk, salt and pepper. Beat to desired consistency. Add more sour cream and milk as needed.
Serves 6 to 8.
Per cup: 201 calories, 5.3g protein, 44g carbohydrates, 3g fiber, 0.3 g fat, 65g sodium.
Variations: While beating, add one of the listed seasonings (increase as desired).
