Title: Jaques Pepin's Potatoes

3/4 | c | Water |
Olive oil | ||
Butter |
Cut ends off potatoes if needed. Slice a patch off opposite sides of each potato, to make flat surfaces. Then cut in half lengthwise. Place potatoes, cut side down, in a skillet with 3/4 cup water. Drizzle olive oil over potatoes; place a pat of butter in center.
Bring to a boil; cover and cook fifteen minutes or until potatoes are tender and water has evaporated. Turn potatoes and cook uncovered until browned on the other side.
