Title: Potatoes Bakers Style

Yield: 4 Servings
3 | lb | Potatoes, peeled and sliced |
1 | lg | Onion, chopped |
1 | lb | Tomatoes, peeled, seeded and chopped |
2 | tb | Parsley, chopped |
2 | cl | Garlic, chopped |
1/2 | ts | Thyme |
Salt and pepper | ||
4 | c | Chicken stock |
In large bowl, mix all except stock. Place potato mixture into baking dish. Add chicken stock 1/2 or 3/4 way up potatoes. Bake 1 hour in 350 degree oven.
