Title: Favorite Potato Turnovers

3cFlour
1tsBaking powder
1/2tsSalt
2 Eggs
2/3cOil
2tbWater
  Filling:
1cChopped onion
6tbMargarine or shortening
1 1/2cReal prepared mashed
  Potatoes
1 Egg
1tsSalt
1/4tsPepper

For dough: Combine the dry ingredients and make a well in the center. Add oil, eggs and water and gradually incorporate the flour mixture to make a soft pliable dough, kneading smooth . Let dough rest while making filling.Saute onions in the margarine till golden. Remove from heat and stir in mashed potatoes, egg, salt and pepper and mix smooth. Roll dough on lightly floured surface to 1/8 inch thick. Use a 3 inch circular cutter to cut out the dough. Place a tablespoon of filling in center. Moisten edges of circle with some water and fold over into center and pinch shut. Place pastries on baking sheet and bake 375 till golden about 25 to 30 minutes. About 2 1/2 dozen.

Note: when first baked these are firm. When allowed to cool and reheated the dough is softer and more mellow; actually the way I enjoy to eat them. Sometimes the filling pops out of the dough when baked and I think it adds to the appeal of these tasty pastries.
