Title: Idaho Potato Cake

1 | c | Butter or margarine, softened |
2 | c | Sugar |
2 | Eggs | |
1 | c | Cold mashed potatoes |
1 | ts | Vanilla extract |
2 | c | All-purpose flour |
1/4 | c | Baking cocoa |
1 | ts | Baking soda |
1 | c | Milk |
1 | c | Chopped nuts |
In a mixing bowl, cream butter and sugar until fluffy. Add eggs, one at a time, beating well after each addition. Blend in potatoes and vanilla. Combine flour, cocoa, and baking soda; add alternately with milk, blending well after each addition. Stir in nuts. Pour into a greased 1 3-in. x 9-in. x 2-in. baking pan. Bake at 350! for 40-45 minutes or until cake tests done. Cool on a wire rack.
Yield: 12-16 servings.
