Title: Potato Flour Muffins

4 | Eggs; separated | |
1/4 | ts | Salt |
1 | tb | Sugar |
1/2 | c | White potato flour |
1 | ts | Baking powder |
2 | tb | Icewater |
Beat egg whites stiff. Add salt and sugar to beaten yolks and fold into whites. Sift flour and baking powder twice and thoroughly beat into eggs. Add icewater last. Bake in moderately hot (400 F) oven for 15 to 20 minutes. Serve warm.
