Title: Potato Yeast

6 | md | Potatoes |
1 | qt | Water |
1/2 | c | Sugar |
1/2 | c | Flour |
1/2 | c | Yeast, from last batch |
Boil the potatoes in water. When quite done, remove them and mash them smooth, then add sugar, flour, and mix all together in the water the potatoes were boiling in.
When lukewarm, add the previous yeast, and let it stand 12 hours before bottling.
Use 2 tbspns of yeast to 3 cups of flour in breadmaking.
