Title: Caribbean Prawn, Green Mango, And Potato Curry

1 | ts | Tumeric |
1 | ts | Garam masala |
1 | ts | Cumin |
1 | ts | Coriander |
1/2 | ts | Chilli powder |
3 | Curry leaves (optional) | |
2 | tb | Ghee or margarine |
1 | lg | Onion, finely chopped |
2 | Cloves of garlic, crushed | |
1 | ts | Ginger |
4 | Tomatoes, peeled & chopped | |
3/4 | pt | Water or stock |
8 | oz | Potato peeled & cubed |
1 | tb | Brown sugar |
1 | sm | Green mango peeled & sliced |
Salt | ||
1 1/2 | lb | Prawns, peeled |
Mix all the spices in a little hot water or stock to form a paste.
Cook onions, ginger, and garlic in ghee until soft.
Add the masala and cook for 5 mins, stirring.
Add the tomatoes and stir well. Slowly add the water or stock, stirring, then the potatoes.
Cook on a moderate heat for 20 mins, then add the sugar, mango, salt, and prawns.
Cook for 10 - 15 mins longer then serve with rice and a cucumber and tomato salad.
