Title: Plank Salmon with New Potato Salad

Yield: 1 Servings
1/2 | lb | Salmon |
1 | tb | Creole spice (Essence) |
1 | Untreated cedar plank | |
Oiled well | ||
1/2 | Onion, grilled | |
1/2 | Pepper, grilled | |
1 | c | BBQ sauce |
1/2 | lb | New potatoes, quartered |
And blanched | ||
1/2 | c | Cilantro, chopped |
1/4 | c | Green onions, sliced |
Salt | ||
Pepper | ||
2 | tb | Mayonnaise |
Rub salmon with creole spice and place on the cedar plank. Place salmon on grill, close the lid. . Chop grilled onion and pepper and add to BBQ sauce. After 4 minutes, brush BBQ sauce on salmon. Let cook 2 more minutes and serve with potato salad.
Potato Salad:
Mix potatoes, cilantro, green onions, salt, pepper, and mayonnaise. Cover and refrigerate until ready to serve.
