Salt | ||
Pepper | ||
2 | ts | To 3 dried oregano, divided |
4 | To 6 baking potatoes, peeled | |
And quartered | ||
1/4 | c | Butter, melted |
3 | tb | Lemon juice |
3/4 | c | Chicken broth |
Preheat oven to 350F.
Pour broth into bottom of a roasting pan. Put chicken on a rack in pan , arrange potatoes around and sprinkle with salt, pepper and oregano. Pour butter and lemon juice over top of chicken and potatoes. Bake 2 to 2 1/2 hours until chicken is tender and browned, basting with pan juices frequently.
