Title: Salmon Steaks Vinaigrette

Yield: 4 Servings
1 | tb | White wine vinegar |
2 | Oranges, juiced | |
2 | Limes, juiced | |
4 | Cloves garlic, sliced | |
1/4 | c | Olive oil |
1/4 | c | Fresh cilantro, chopped |
Salt and pepper to taste | ||
4 | Salmon steaks, 8 ounces each |
Combine vinegar, orange and lime juices and garlic in mixing bowl. Whisk in the olive oil, cilantro and salt and pepper. Place salmon steaks in shallow non-reactive container and pour the vinaigrette over the salmon; marinate for 60 minutes, turning once. Preheat broiler and broil steaks until cooked through, approximately 5 minutes per side. Serve with 1 tablespoon of vinaigrette drizzled over each steak.
