Title: Skillet Salmon Patties

Yield: 4 Servings
2 | Slightly beaten eggs | |
3/4 | c | Fine dry breadcrumbs |
1/3 | c | Creamy cucumber salad |
Dressing | ||
15 1/2 | oz | Red salmon, skin and bones |
Removed -- drained | ||
And | ||
Flaked | ||
1/2 | c | Chopped water chestnuts |
1 | tb | Snipped dried chives |
2 | tb | Cooking oil |
2 | tb | Mayonnaise or salad |
Dressing |
1. Combine eggs, 1/2 cup of bread crumbs, and 2 tablespoons of dressing. Add salmon, water chestnuts, and chives. Mix well. On waxed paper, shape the salmon mixture into four 3/4-inch thick patties. Coat the patties with the remaining bread crumbs. 2.In a 12-inch skillet, cook patties in hot oil over medium heat about 6 minutes or until golden, carefully turning once. 3. Meanwhile, combine remaining dressing and mayonnaise. Dollop each patty with some of the dressing mixture.
