Title: Peppered Salmon Fillets with Minted Tomato Salsa

4cChopped tomato (approx. 2
  Pounds)
1/4cFinely chopped red onion
2tbChopped fresh mint
1tbChopped fresh basil
1tbChopped seeded jalapeno
1tbLemon juice
4 6-ounce
  Cooking spray -- to coat
  Baking dish
2tbDijon mustard
1tsCoarsely ground pepper
  Salmon fillets -- 1 1/2"
  Thick

SALSA: Combine first six ingredients (tomato through lemon juice) in a bowl; set aside.

Place salmon on prepared broiler pan. Spread each fillet with 1/2 teaspoon mustard; sprinkle with pepper. Broil ~10 minutes or until desired degree of doneness. Let stand 2 minutes; serve with salsa.
