Title: Salmon with Pineapple Salsa

SALSA: | ||
1 1/2 | c | Diced fresh pineapple or |
Drained canned unsweetened | ||
Chunks | ||
1/4 | c | Minced red bell pepper |
1/4 | c | Minced green bell pepper |
1/4 | c | Minced red onion |
1/4 | c | Chopped fresh cilantro |
1 | tb | Fresh lime juice |
2 1/2 | ts | Minced seeded jalapeno |
Chili | ||
1/4 | ts | Grated lime peel |
SALMON: | ||
4 | (6-8 ounce) | |
Salmon steaks -- (3/4" | ||
Thick) | ||
1 | ts | Low-sodium soy sauce |
SALSA: Combine all ingredients in small bowl. Season to taste with salt. (Can be prepared 6 hours ahead. Cover and refrigerate.)
SALMON: Preheat broiler. Brush salmon steaks with soy sauce and place on broiler pan. Broil until salmon is just opaque in center, about 3 minutes per side. Serve salmon, passing pineapple salsa separately.
