Title: Smokey Salmon Nuggets

2 | c | Flaked, smoked salmon |
1 1/2 | c | Seasoned mashed potatoes |
1 | Egg, beaten slightly | |
1 | ts | Onion, grated |
1/2 | c | Cornflake crumbs, fine |
1 | ds | Pepper, to taste |
Oil for deep frying |
Combine fish, potatoes, egg, onion and pepper. Beat until smooth. Chill well.
Portion fish mixture with a 1/4 cup measure. Shame into balls. Roll in cornflake crumbs. Fry in hot, deep fat, 350 degrees for 3 to 5 minutes or until thoroughly heated and lightly browned.
Serve hot with your favorite egg or cheese sauce. Makes 12 balls.
