Title: Tim Quinn's Grilled Honey-Lavender Salmon

3 | tb | Best olive oil |
3 | oz | Honey |
3 | oz | Dry white wine |
2 | ts | Peppercorns; crushed |
2 | lb | Salmon fillets; skinned; in |

Infuse lavender in oil at least 32 hr ahead, keeping it at cool room temperature.
At least 8 hrs ahead: combine all ingredients and let fish marinate at least 8 hr.
Grill on a well-oiled grate, skin side down, 3 min. Flip and grill 3 more min or until done.
