Title: Tim Quinn's Grilled Honey-Lavender Salmon

2 1/2tbFresh lavender leaves and/or
  Flowers; chopped
3tbBest olive oil
3ozHoney
3ozDry white wine
2tsPeppercorns; crushed
2lbSalmon fillets; skinned; in
4 Pieces

Infuse lavender in oil at least 32 hr ahead, keeping it at cool room temperature.

At least 8 hrs ahead: combine all ingredients and let fish marinate at least 8 hr.

Grill on a well-oiled grate, skin side down, 3 min. Flip and grill 3 more min or until done.
