Title: Belle Salmon

3 | Red bell peppers, roasted, | |
Peeled, pureed | ||
1 | Salmon fillet, about 1 lb, | |
Skinned and cut into four | ||

1 | Yellow bell pepper, sliced | |

Place puree in baking dish. Heat briefly in microwave until warm. Place salmon atop puree. Sprinkle with lemon pepper (I use Penzey's Sunny Spain). Sprinkle with yellow pepper slices. Cover. Microwave on high about 5 minutes, or until salmon flakes easily.
This recipe, using salmon and bell peppers, is one I adapted from "Microwave Gourmet" by Barbara Kafka, the best microwave cookbook on earth. It's fast, easy, delicious and beautiful. Feel free to vary the colors of the bell peppers, and try it with swordfish too.
