Yield: 4 Servings

11ozGood quality fresh smoked
  Salmon; diced
1tbCapers; drained
1tbYellow onion; minced
1tbShallots; minced
1tbChives; minced
1tbFresh lemon juice
1tsWorcestershire sauce
1tbOlive oil
1 Lemon; zest of
1tsDijon mustard; mixed with
  Powdered wasabe ad lib
  ;s&p to taste
2tbFresh tomato; diced

Mix all ingredients above at last minute and mold into small mounds. Garnish with salad of fennel bulb, red radish, celery and cucumber (all sliced paper thin on a meat slicer). Serve with olive oil, lemon juice, and sherry vinegar. From: Michael Loo Date: 22 Nov 97
