11 | oz | Good quality fresh smoked |
| | Salmon; diced |
1 | tb | Capers; drained |
1 | tb | Yellow onion; minced |
1 | tb | Shallots; minced |
1 | tb | Chives; minced |
1 | tb | Fresh lemon juice |
1 | ts | Worcestershire sauce |
1 | tb | Olive oil |
1 | | Lemon; zest of |
1 | ts | Dijon mustard; mixed with |
| | Powdered wasabe ad lib |
| | ;s&p to taste |
2 | tb | Fresh tomato; diced |
Mix all ingredients above at last minute and mold into small mounds.
Garnish with salad of fennel bulb, red radish, celery and cucumber (all
sliced paper thin on a meat slicer). Serve with olive oil, lemon juice, and
