Title: Kedgeree Au Gratin

Yield: 2 Servings
3 | oz | Long grain rice |
2 | oz | Grated cheddar cheese |
1/4 | oz | Butter |
8 | oz | Can of red salmon |
1 | md | Tomato |
Salt and pepper to taste | ||
Parsley for garnish |
Cook rice until tender and drain well.
Melt the butter in a heavy skillet, add the rice and the drained, flaked salmon. Saute til rice is golden. Season to taste.
Place into a shallow, oven-proof dish. Sprinkle with grated cheese and garnish with sliced tomato. Place under hot grill and and brown. Garnish with parsley.
