1/4 | ts | Seasoned salt |
1/4 | c | Plain nonfat yougurt |
1/2 | ts | Dillweed |
1/2 | ts | Lemon pepper |
1/2 | ts | Small tomato, diced |
2 | sm | Or 1 large salmon fillet, |
| | Boned |
1 | | Zucchini, thickly sliced |
Preheat broiler as manufaturer directs. Arange potato slices in single
layer at one end of rack in broiling pan. Melt margarine; stir in seasoned
salt. With pastry brush, lightly brush mixture over potato slices. Place
broiling pan in oven 5-7 inches from source of heat; broil potatoes 8
minutes. In a small bowl, combine yogurt, dillweed, lemon pepper, and diced
tomato; set aside. Remove broiling pan from broiler; turn potato slices.
Arrange salmon fillets on broiling pan with potato slices; brush salmon and
potatoes with remaining margarine mixture. Broil salmon and potatoes 8
minutes longer or until potatoes are golden and fish flakes easily when
tested with a fork. Meanwhile, saute' zucchini in a nonstick skillet coated
with cooking spray. Sprinkle with seasoned salt. To serve, arrange salmon,
potatoes, and zucchini on warm dinner plates. Serve yogurt sauce with
