Title: Grilled or Barbecued Salmon with Fennel

2 | lg | Fennel bulbs |
1/4 | c | Olive oil |
2 | tb | Lemon juice |
1/2 | ts | Salt |
4 | Salmon steaks about 1 inch thick | |
4 | tb | Butter; melted |

Chop the tops of the fennel to make 1/4 cup and mix with the oil, lemon juice, and salt. Pour this over the salmon and coat both sides and let sit for 1/2 hour. Turn the fish once. Take off and discard the remaining fennel tops. Cut each bulb in half and blanch in boiling water for about 7 minutes. Have your fire ready. Put the fish on the grilling rack about 4-6 inches from the coals. Place the fennel cut side down on the rack. Grill both fish and fennel for 8-10 minutes turning the fish once. Turn the fennel 3-4 times and brush it with the melted butter. Serve with lemon wedges. Grill the salmon over a hot fire so it cooks quickly and stays moist.
