Well tried something a little different today... I made up some salmon patties and used direct heat and smoke on them..... used the water smoker without the water pan.. had the patties about 2 feet above the fire..... used a small amount of charcoal and some maple chips for the smoke.... poor mans smoked salmon.... the temp was only about 200 degrees but they came out very well.... I took one out at 45 min. and it was not done yet so back it went..... I tested the temp at 1 hour it was up to 135....still not to my liking..... so back it went..... 1 hour and 20 min..... browned up nice and temp as up to 160.... Had a nice flavor and a nice crust over the dry direct heat....... had two with a nice slice of onion and salt and pepper....... I will have to try this again... not a bad snack ! ! ! These were pretty big about 4 inches across and about 3/4 " thick.......
